How Tannins Work in Sugar Processing

Tannins, when added in optimal amounts, act as fining agents that promote the formation of precipitates with non-sugar colloids and positively charged ions in sugar liquors and thereby enhance the clarifying effect. 

Tannins due to hydrogen bonding, flocculation and calcium carbonate absorption will help remove non sugar proteins, polysaccharides, lipids, organic colloids and metal ions.
